This Avocado Chicken Salad is a vibrant, creamy dish combining ripe avocados, rotisserie chicken, and fresh vegetables, perfect for a refreshing meal any time of the year.

Ingredients

2 cups Cooked Chicken Breast
2 large Ripe Avocados
1/4 cup Red Onio
2 Celery Stalks
1/4 cup Fresh Cilantro
2 tablespoons Lime Juice
1 tablespoon Olive Oil
1 teaspoon Dijon Mustard
1/2 teaspoon Salt
1/4 teaspoon Black Pepper

Instructions

  1. Prepare the chicken: shred or dice into bite-sized pieces and place in a mixing bowl
  2. Dice the red onion and celery, add them to the bowl with chicke
  3. Chop the cilantro and add to the bowl
  4. Halve and dice the avocados, add them to the bowl immediately
  5. Pour lime juice and olive oil over the mixture, and add mustard, salt, and pepper
  6. Gently combine the ingredients, taking care not to mash the avocado too much
  7. Taste and adjust seasonings as needed
  8. Serve immediately or chill for at least 30 minutes

Notes

Use ripe avocados for best results; prevent browning by using lime juice.
