A delicious dessert made with thin noodle-like pastry soaked in sweet syrup and layered with cheese, capturing the essence of traditional Middle Eastern flavors.

Ingredients

1 lb Kadayif (shredded phyllo dough)
1 cup Unsalted butter (melted) or Ghee
1.5 cups Mozzarella cheese (low-moisture, shredded, unsalted)
1 cup Ricotta cheese (whole milk, drained)
1/4 tsp Orange food coloring (optional)
1/4 cup Pistachios (finely chopped, for garnish)
2 cups Granulated sugar
1 cup Water
1 tbsp Lemon juice
1 tsp Orange blossom water (or rose water, optional)

Instructions

  1. Combine sugar and water in a saucepan, boil until sugar dissolves, then simmer for 5-7 minutes. Stir in lemon juice and flavoring, set aside to cool
  2. Prepare kadayif dough by separating strands and coating with melted butter
  3. Mix mozzarella and ricotta for the cheese filling. Grease pan and layer dough and cheese according to recipe
  4. Bake in preheated oven at 375°F (190°C) for 30-40 minutes until golden brown. Flip onto a plate and pour cold syrup over
  5. Garnish with pistachios and serve warm

Notes

Ensure to use unsalted cheese and cold syrup on hot Kunafa for the best results.
