These Blueberry Protein Muffins are a healthy, convenient breakfast option that is quick to prepare. Packed with protein and bursting with blueberry flavor, they are perfect for busy mornings.

Ingredients

1 ½ cups All-purpose flour
½ cup Vanilla protein powder
½ cup Granulated sugar
2 teaspoons Baking powder
½ teaspoon Baking soda
¼ teaspoon Salt
1 Large egg
½ cup Greek yogurt (plain)
½ cup Milk
¼ cup Vegetable oil (or melted coconut oil)
1 teaspoon Vanilla extract
1 cup Fresh or frozen blueberries

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a muffin ti
  2. Whisk together all-purpose flour, protein powder, granulated sugar, baking powder, baking soda, and salt in a bowl
  3. In another bowl, whisk together egg, Greek yogurt, milk, vegetable oil, and vanilla extract until smooth
  4. Combine the wet and dry ingredients, mixing gently until just combined
  5. Fold in the blueberries without thawing if they are froze
  6. Divide the batter among muffin cups, filling about two-thirds full
  7. Bake for 5 minutes at 400°F, then reduce to 375°F (190°C) for another 15-18 minutes until a skewer comes out clea
  8. Cool in the tin for 5 minutes before transferring to a wire rack to cool completely

Notes

Do not overmix the batter to ensure muffins are light and tender.

Use room temperature ingredients for better emulsification.

Store in an airtight container at room temperature for 2-3 days or refrigerate for longer freshness.
