A vibrant and crunchy cabbage salad packed with nutrients, featuring a zesty dressing. Perfect for any meal or gathering, this salad is easy to make and incredibly delicious.

1 medium head Green Cabbage, thinly sliced
1/2 medium head Red Cabbage, thinly sliced
2 medium Carrots, shredded or julienned
1 medium Red Bell Pepper, thinly sliced
4 Green Onions, thinly sliced
1/2 cup Fresh Cilantro, chopped
2 tablespoons Toasted Sesame Seeds, for garnish
1/3 cup Rice Vinegar
1/4 cup Soy Sauce, low sodium
2 tablespoons Sesame Oil
1 tablespoon Honey or Maple Syrup
1 tablespoon Fresh Ginger, grated
1 clove Garlic, minced
1 teaspoon Sriracha or Chili Garlic Sauce
1 tablespoon Lime Juice, freshly squeezed

Instructions

  1. Remove any outer bruised leaves from both the green and red cabbage. Halve the cabbage heads and remove the tough core. Thinly slice both cabbages and place in a large mixing bowl
  2. Shred the carrots and thinly slice the red bell pepper and green onions. Chop the fresh cilantro and add all these prepared vegetables to the bowl with the cabbage
  3. In a separate bowl, combine all dressing ingredients: rice vinegar, soy sauce, sesame oil, honey or maple syrup, grated ginger, minced garlic, sriracha, and lime juice. Whisk until well combined
  4. Pour the dressing over the vegetables and toss thoroughly to coat
  5. Cover and refrigerate for at least 30 minutes to allow flavors to meld
  6. Before serving, give the salad another toss, garnish with toasted sesame seeds and serve

Notes

For added protein, consider adding grilled chicken, shrimp, or tofu.
