These Carrot Cake Bars are rich, moist, and spiced, topped with a tangy cream cheese frosting, making them a perfect dessert for any occasion.

Ingredients

2 cups All-purpose flour
2 tsp Baking soda
1 tsp Ground cinnamo
½ tsp Ground nutmeg
¼ tsp Ground ginger
½ tsp Salt
1½ cups Granulated sugar
½ cup Packed light brown sugar
1 cup Vegetable oil
4 Large eggs
1 tsp Vanilla extract
3 cups Finely grated carrots
1 cup Chopped pecans or walnuts
½ cup Raisins
8 oz Cream cheese, softened
½ cup Unsalted butter, softened
4 cups Powdered sugar
1 tsp Vanilla extract
1-2 tbsp Milk or heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking pa
  2. In a large bowl, whisk together dry ingredients
  3. In a separate bowl, whisk together wet ingredients and incorporate eggs one at a time
  4. Gradually combine dry ingredients into wet ingredients without overmixing
  5. Fold in grated carrots, nuts, and raisins if using
  6. Spread batter into prepared pan and bake for 30-35 minutes
  7. Let the bars cool completely before making the frosting
  8. Beat cream cheese and butter until fluffy, then add powdered sugar and vanilla
  9. Frost the cooled bars, cut into squares, and serve

Notes

For a healthier version, substitute half of the oil with applesauce.

Ensure the carrots are finely grated for optimal texture.
