2 boneless, skinless chicken breasts (about 1 lb) diced
2 tablespoons Olive Oil
1/4 cup Hot Honey
1 tablespoon Apple Cider Vinegar
1 teaspoon Smoked Paprika
1/2 teaspoon Garlic Powder
1/2 teaspoon Onion Powder
Salt and Black Pepper to taste
1/2 cup Sour Cream or Plain Greek Yogurt
1 large Jalapeño deseeded and roughly chopped
2 tablespoons Fresh Lime Juice
1/4 cup Fresh Cilantro packed
1 small clove Garlic peeled
8 large Flour Tortillas (10-inch)
1 tablespoon Olive Oil or Butter for cooking quesadillas

Instructions

  1. Prepare the Hot Honey Chicken: In a medium bowl, toss diced chicken with olive oil, hot honey, apple cider vinegar, smoked paprika, garlic powder, onion powder, salt, and pepper. Let it marinate for at least 15 minutes
  2. Cook the Chicken: Heat a large skillet over medium-high heat. Add marinated chicken and cook for 5-7 minutes until cooked through and lightly caramelized
  3. Make the Spicy Jalapeño Cream Sauce: Blend sour cream, chopped jalapeño, fresh cilantro, lime juice, garlic, and salt until smooth
  4. Assemble the Quesadillas: Heat a skillet and add 1/2 tablespoon of oil or butter, place a tortilla in the skillet, sprinkle with cheese, add chicken, more cheese, fold and cook for 2-3 minutes per side
  5. Serve: Slice quesadillas into wedges and serve with jalapeño cream sauce

Notes

Use a rotisserie chicken for quicker preparation.

Avoid overcrowding the skillet while cooking quesadillas.
