A quick and healthy Chicken and Mushroom Stir-Fry that is bursting with flavor and perfect for busy weeknights. This recipe features tender chicken pieces, earthy mushrooms, and a savory sauce that is sure to become a family favorite.

1.5 lbs Boneless, Skinless Chicken Breasts or Thighs, cut into 1-inch pieces
1 lb Cremini Mushrooms, sliced
1/4 cup Soy Sauce
1/4 cup Chicken Broth
1 tablespoon Cornstarch
1 tablespoon Honey or Brown Sugar
1 teaspoon Toasted Sesame Oil
1 tablespoon Fresh Ginger, grated or minced
2-3 cloves Fresh Garlic, minced
2 tablespoons Neutral Oil
2 cups Broccoli Florets, optional
3 Green Onions, sliced, for garnish
1 teaspoon Sesame Seeds, for garnish

Instructions

  1. Pat chicken pieces dry with paper towels
  2. In a bowl, combine soy sauce, chicken broth, cornstarch, honey, and sesame oil. Whisk until smooth
  3. Heat 1 tablespoon of neutral oil in a wok or skillet over high heat
  4. Add chicken in a single layer and cook for 3-4 minutes until browned and cooked through. Remove and set aside
  5. Add remaining oil to the wok, followed by mushrooms and broccoli (if using) and stir-fry for 3-5 minutes
  6. Push vegetables aside, add ginger and garlic, and stir-fry for 30 seconds
  7. Return chicken to the wok, whisk sauce again, and pour over everything
  8. Stir constantly as the sauce thickens for about 1-2 minutes
  9. Remove from heat, garnish with green onions and sesame seeds, and serve immediately

Notes

You can substitute chicken with beef, shrimp, or tofu. Adjust cooking times accordingly.
