A refreshing and hearty Chicken Caesar Pasta Salad combining classic Caesar flavors with noodles, perfect for quick dinners and potlucks.

Ingredients

1 pound Pasta (penne, rotini, or fusilli)
2 cups Cooked Chicken Breast (shredded or diced)
1 large head Romaine Lettuce (washed, dried, and chopped)
1 cup Parmesan Cheese (freshly grated, plus more for garnish)
1 cup Croutons (crispy Caesar croutons are best)
1 – 1.5 cups Caesar Dressing (your favorite store-bought or homemade)
1 pint Cherry Tomatoes (halved, optional)
1/4 cup Red Onion (thinly sliced or finely diced, optional)
Black Pepper (to taste, freshly cracked)

Instructions

  1. Step 1: Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Drain and rinse with cold water to cool
  2. Step 2: Prepare the Chicken: Shred or dice the cooked chicken. Optionally, season and cook fresh chicken breasts
  3. Step 3: Chop the Lettuce: Wash and dry the romaine lettuce, then chop it into bite-sized pieces
  4. Step 4: Combine Ingredients: In a large bowl, mix the cooled pasta, shredded chicken, chopped lettuce, and optional cherry tomatoes or red onio
  5. Step 5: Dress the Salad: Pour half to two-thirds of the Caesar dressing over the salad and toss gently
  6. Step 6: Add Cheese and Croutons: Sprinkle in most of the grated Parmesan and croutons, tossing lightly
  7. Step 7: Taste and Adjust: Adjust seasoning and add more dressing if needed
  8. Step 8: Serve or Chill: Serve immediately or chill for at least 30 minutes before serving
