These Cottage Cheese Egg Bites are a nutritious, protein-packed breakfast or snack option, easy to prepare and endlessly customizable.

Ingredients

12 Large Eggs
1 cup Cottage Cheese (small curd)
1/2 cup Shredded Cheese
1 cup Fresh Spinach (chopped)
1/2 cup Bell Pepper (diced)
1/2 teaspoon Salt
1/4 teaspoon Black Pepper
Cooking Spray as needed

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin with cooking spray
  2. In a large bowl, whisk together the 12 large eggs until fully combined and slightly frothy
  3. Add the cottage cheese, shredded cheese, chopped spinach, diced bell pepper, salt, and black pepper to the bowl with the whisked eggs
  4. Gently fold all the ingredients together until evenly mixed
  5. Pour the egg mixture into the prepared muffin cups, filling each about two-thirds full
  6. Bake for 20-25 minutes or until the egg bites are set and golden brown around the edges
  7. Allow to cool in the tin for about 5 minutes before carefully removing the egg bites
  8. Serve warm or allow to cool completely before storing

Notes

Use silicone muffin liners for easier removal, and ensure any added vegetables are pre-cooked and drained.
