A simple, high-protein, gluten-free flatbread made with cottage cheese that is versatile and can be adapted with various toppings.

Ingredients

2 cups Full-Fat Cottage Cheese
2 Large Eggs
2 tablespoons All-Purpose Flour
1 teaspoon Garlic Powder
1/2 teaspoon Onion Powder
1 teaspoon Dried Italian Herbs
1/2 teaspoon Salt
1/4 teaspoon Black Pepper
1 tablespoon Olive Oil (for greasing)

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper greased with olive oil
  2. In a blender, combine the cottage cheese, eggs, flour, garlic powder, onion powder, dried herbs, salt, and pepper. Blend until smooth
  3. Pour the batter onto the prepared baking sheet and spread evenly into a rectangle about 1/4 to 1/2 inch thick
  4. Bake for 25-35 minutes until the edges are golden and the center feels firm
  5. Allow the flatbread to cool for 5-10 minutes, then slice and serve
