1 pound Pasta
1 ½ pounds Fresh Asparagus
2 tablespoons Olive Oil
4-5 cloves Garlic minced
1 ½ cups Heavy Cream
¾ cup Parmesan Cheese freshly grated
½ cup Vegetable Broth
1 teaspoon Lemon Zest
¼ cup Fresh Parsley chopped
Salt to taste

Instructions

  1. Trim the woody ends off the asparagus and cut into 1-inch pieces
  2. Bring a large pot of salted water to a boil, add pasta, and cook until al dente. Reserve 1 cup pasta water, then drai
  3. In a skillet, heat olive oil and sauté asparagus for 3-5 minutes until bright green and tender-crisp
  4. Add garlic and sauté for another minute until fragrant
  5. Pour in heavy cream and vegetable broth, bringing to a simmer, then reduce heat
  6. Stir in grated Parmesan until melted, and add lemon zest
  7. Combine cooked pasta with asparagus and cream sauce, adjusting consistency with reserved pasta water as needed
  8. Season with salt and pepper, garnish with parsley, and serve immediately

Notes

For a lighter dish, substitute half of the heavy cream with milk.
