12 ounces Linguine or Fettuccine
1.5 pounds Large Shrimp
2 tablespoons Olive Oil
4-5 cloves Garlic
1/2 cup Sun-Dried Tomatoes
1 cup Chicken Broth
1 cup Heavy Cream
1/2 cup Parmesan Cheese
5 ounces Fresh Spinach
1/2 teaspoon Salt
1/4 teaspoon Black Pepper
1/4 teaspoon Red Pepper Flakes
Fresh Basil or Parsley for garnish

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add your linguine or fettuccine and cook according to package directions until al dente. Reserve about 1 cup of the starchy pasta water before draining
  2. Prepare the Shrimp: Pat the shrimp dry and season lightly with salt and pepper
  3. Sauté the Shrimp: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the shrimp in a single layer and cook for 1-2 minutes per side until pink. Remove the shrimp and set aside
  4. Build the Sauce Base: Add the remaining olive oil to the skillet and reduce heat to medium. Add minced garlic and red pepper flakes, sauté for about 1 minute until fragrant
  5. Add Sun-Dried Tomatoes and Broth: Stir in chopped sun-dried tomatoes and chicken broth, bringing it to a gentle simmer for 2-3 minutes
  6. Create the Creamy Sauce: Stir in heavy cream and half of the Parmesan cheese, simmering for 3-5 minutes until the sauce thickens
  7. Incorporate Spinach and Pasta: Add fresh spinach to the sauce, cooking until wilted. Toss in the cooked pasta to coat with the sauce
  8. Combine and Serve: Return shrimp to the skillet, toss gently to combine, and heat through. Garnish with fresh herbs and extra Parmesan cheese before serving

Notes

Do not overcook the shrimp as it will become rubbery. Use freshly grated Parmesan cheese for a smoother sauce.

Reserve some pasta water to adjust sauce consistency if needed.
