Ingredients

Scale

3 lbs Chicken Wings (flats and drumettes)
1 tbsp Baking Powder (aluminum-free)
1 tsp Kosher Salt
½ tsp Black Pepper
½ tsp Garlic Powder
½ tsp Paprika (optional)
1 tbsp Olive Oil (or other neutral oil)

Instructions

  1. Prepare the Wings: Pat the chicken wings dry with paper towels
  2. Combine Dry Ingredients: In a large bowl, whisk together the baking powder, kosher salt, black pepper, garlic powder, and optional paprika
  3. Season the Wings: Drizzle olive oil over the wings and toss to coat. Sprinkle the dry seasoning mixture over the wings and toss until coated

  5. Preheat Your Oven: Set your oven to 400°F (200°C)
  6. Bake the Wings: Bake for 40-50 minutes, flipping halfway through
  7. Increase Heat for Extra Crisp: Raise the temperature to 425°F (220°C) for the last 10 minutes
  8. Rest and Serve: Let wings rest for 5 minutes before serving

Notes

Ensure wings are thoroughly dry for maximum crispiness.

Using aluminum-free baking powder is crucial.
