Crispy Chicken Quesadillas are a quick and delicious dish featuring seasoned chicken, gooey cheese, and golden-brown tortillas, making them a family favorite.

2 cups Cooked Chicken Breast, shredded or diced
8 Flour Tortillas, 8-inch
1.5 cups Shredded Monterey Jack Cheese
1 cup Shredded Cheddar Cheese
1 tsp Onion Powder
1 tsp Garlic Powder
1/2 tsp Smoked Paprika
1/2 tsp Salt, or to taste
1/4 tsp Black Pepper, or to taste
2-3 tbsp Olive Oil or Vegetable Oil
1/4 cup Diced Green Chilies (optional)
2 tbsp Fresh Cilantro, chopped (optional)

Instructions

  1. Prepare the Chicken Filling: In a medium bowl, combine your shredded or diced cooked chicken with the onion powder, garlic powder, smoked paprika, salt, and black pepper. Mix thoroughly until the chicken is evenly coated. If using, stir in the diced green chilies and fresh cilantro
  2. Mix the Cheese: In a separate bowl, combine the shredded Monterey Jack and Cheddar cheeses
  3. Heat the Skillet: Place a large non-stick skillet over medium heat. Add about 1 teaspoon of oil to coat the bottom, allowing it to heat until it shimmers
  4. Assemble the First Quesadilla: Lay one tortilla flat in the hot skillet. Sprinkle about 1/4 cup of mixed cheese over half of the tortilla
  5. Add Chicken: Spoon approximately 1/4 to 1/3 cup of the seasoned chicken mixture evenly over the cheese-covered half
  6. Add More Cheese: Top the chicken with another 1/4 cup of mixed cheese
  7. Fold and Cook: Carefully fold the empty half of the tortilla over the filled half. Gently press down with a spatula
  8. Cook Until Golden: Cook for 3-4 minutes per side, or until golden brown and crispy, and the cheese is completely melted
  9. Remove and Repeat: Carefully remove the cooked quesadilla and place it on a cutting board. Add another teaspoon of oil to the pan and repeat with remaining tortillas and filling
  10. Serve: Cut each quesadilla into wedges. Serve immediately

Notes

Do not overfill to prevent sogginess.

Use medium heat for even cooking.
