Crispy Cotton Candy – Cheesecake Bombs are whimsical desserts that combine the sweet flavor of cotton candy with creamy cheesecake, all wrapped in a crispy coating, making them perfect for any occasion.

Ingredients

8 oz Cream Cheese
1/2 cup Powdered Sugar
1 tsp Vanilla Extract
1/2 tsp Cotton Candy Flavoring
a few drops Pink Food Coloring (optional)
3 cups Crispy Rice Cereal
12 oz White Chocolate Chips
1 tbsp Vegetable Oil or Coconut Oil
Sprinkles (optional, as desired)

Instructions

  1. Prepare the Cheesecake Filling by beating softened cream cheese until smooth and creamy. Gradually add powdered sugar, then mix in vanilla extract, cotton candy flavoring, and food coloring until well combined
  2. Form the Bombs by scooping tablespoon-sized portions of the cheesecake mixture and rolling them into balls. Place them on a lined baking sheet
  3. Chill the Cheesecake Balls in the freezer for 30-45 minutes
  4. Prepare the Crispy Coating by melting white chocolate chips and mixing in oil until smooth. Place crispy rice cereal in a separate bowl
  5. Coat the Bombs by dipping each cheesecake ball in melted chocolate. Then roll it in crispy rice cereal until coated
  6. Place the coated Cheesecake Bombs back on the baking sheet and sprinkle with sprinkles if desired. Chill again for 15-20 minutes to harde
  7. Serve and enjoy the Crispy Cotton Candy – Cheesecake Bombs!

Notes

Ensure cream cheese is at room temperature for smooth mixing.

Quickly work with the cheesecake balls; if they soften, return to the freezer.
