Crispy Hot Honey Chicken is a delightful dish that combines shatteringly crisp chicken pieces with a sticky, spicy-sweet hot honey glaze. This recipe is perfect for family gatherings or casual weeknight dinners.

2.5-3 lbs Boneless, skinless chicken thighs or breasts, cut into 1.5-inch pieces
1 cup All-purpose flour
½ cup Cornstarch
1 tablespoon Smoked paprika
1 teaspoon Garlic powder
1 teaspoon Onion powder
¼ teaspoon Cayenne pepper (or more, to taste)
1 teaspoon Salt
½ teaspoon Black pepper
1 large Egg
¼ cup Milk or buttermilk
4-6 cups Vegetable, canola, or peanut oil, for frying
½ cup Hot honey (store-bought or homemade)
2 tablespoons Unsalted butter
1 tablespoon Apple cider vinegar
½ teaspoon Cayenne pepper (optional, for extra kick)

Instructions

  1. Prepare the chicken by patting dry. Mix egg and milk in one bowl and flour, cornstarch, spices, and salt in another
  2. Coat chicken pieces in egg, then dredge in flour mixture. Let rest for 15-20 minutes
  3. Heat oil to 350°F (175°C) in a pot
  4. Fry chicken in batches for 5-7 minutes until golden brown and cooked through
  5. Drain chicken on wire rack and sprinkle with salt
  6. For hot honey sauce, combine hot honey, butter, vinegar, cayenne, and salt in a saucepan. Heat and stir until combined
  7. Toss fried chicken in the hot honey sauce and serve immediately

Notes

You can brine the chicken in buttermilk for extra juiciness.

Double dredging will give a thicker coating for more crispiness.

Maintain the oil temperature for the best frying results.
