1 cup Miniature peanut butter cups, chopped
1 cup Semi-sweet chocolate chips
½ cup Heavy cream
1 tablespoon Unsalted butter

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 10×15-inch jelly roll pan with parchment paper and grease lightly
  2. Beat the egg yolks with ½ cup granulated sugar until pale and thick. Stir in the vanilla extract and milk
  3. Whisk together the flour, cocoa powder, baking powder, and salt. Fold the dry ingredients into the egg yolk mixture until just combined
  4. In a separate bowl, beat egg whites with remaining ¼ cup sugar until stiff peaks form. Gently fold egg whites into the batter until no streaks remai
  5. Pour the batter into the prepared pan and spread evenly. Bake for 12-15 minutes, until the cake springs back when lightly touched
  6. Invert the hot cake onto a kitchen towel dusted with powdered sugar. Roll up the cake tightly with the towel inside and let it cool completely
  7. For the filling, cream together the softened butter and peanut butter until light and fluffy. Gradually add powdered sugar, alternating with heavy cream and vanilla. Fold in chopped peanut butter cups
  8. For the ganache, heat heavy cream until simmering, pour over chocolate chips, let sit for 5 minutes, then whisk until smooth and glossy
  9. Unroll the cooled cake, spread peanut butter filling evenly over it, re-roll without the towel. Transfer to a serving platter
  10. Pour ganache over the top and let it drip down the sides. Refrigerate for at least 1 hour before slicing
