Delicious Easter Pineapple Heaven Cake is a moist and airy cake infused with sweet pineapple, topped with cream cheese frosting, perfect for spring celebrations.

Ingredients

2 cups All-purpose flour
1 ½ cups Granulated sugar
2 teaspoons Baking powder
1 teaspoon Baking soda
½ teaspoon Salt
3 Large eggs, room temperature
½ cup Unsalted butter, melted and cooled
1 cup Buttermilk, room temperature
1 teaspoon Vanilla extract
1 (20-ounce) can Crushed pineapple, undrained
8 ounces Cream cheese, softened
½ cup Unsalted butter, softened
4 cups Powdered sugar, sifted
1 teaspoon Vanilla extract
1-2 tablespoons Milk or cream (if needed for consistency)
¼ cup Toasted coconut flakes (optional)
½ cup Fresh pineapple chunks (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan or two 8-inch round cake pans
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt
  3. In a separate bowl, beat the eggs until frothy. Whisk in the melted butter, buttermilk, and vanilla extract
  4. Gradually add wet ingredients to dry ingredients and mix until just combined
  5. Fold in the undrained crushed pineapple
  6. Pour batter into prepared pans and bake for 30-35 minutes for the 9×13 inch pan, or 25-30 minutes for round pans. Test with a toothpick
  7. Let the cake cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely
  8. Prepare the frosting by beating together cream cheese and butter until smooth. Gradually add sifted powdered sugar and mix until incorporated. Add vanilla extract and adjust consistency with milk or cream if necessary
  9. Once the cake is cool, frost with cream cheese frosting and garnish with toasted coconut and fresh pineapple, if desired
