8 ounces Cream Cheese, softened
½ cup Unsalted Butter, softened
3-4 cups Powdered Sugar
1 teaspoon Vanilla Extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners
  2. In a large bowl, whisk together the flour, sugar, baking soda, baking powder, cinnamon, nutmeg, ginger, cloves, and salt
  3. In a separate medium bowl, whisk together the pumpkin puree, eggs, vegetable oil, milk, and vanilla extract
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined
  5. Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full
  6. Bake for 18-22 minutes or until a skewer inserted comes out clea
  7. Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely
  8. For optional cream cheese frosting, beat cream cheese and butter until smooth, gradually add powdered sugar, then mix in vanilla extract
  9. Frost cooled cupcakes and serve
