½ cup Fresh Lemon Juice
2 tablespoons Lemon Zest
2 cups Whole Milk

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 12-cup muffin tin or twelve individual ramekins
  2. In a large mixing bowl, whisk together the granulated sugar, all-purpose flour, and pinch of salt until no lumps remai
  3. Pour in the melted and slightly cooled butter, fresh lemon juice, lemon zest, and crack the eggs into the bowl
  4. Whisk the ingredients together until well combined
  5. Gradually add the whole milk, whisking until the batter becomes smooth
  6. Pour the batter evenly into the prepared muffin tin or ramekins, filling them about two-thirds full
  7. Bake in the preheated oven for 30-40 minutes, or until golden brown and the centers are just set
  8. Let the pies cool completely on a wire rack before serving
  9. Dust with confectioners' sugar before serving if desired
