1/2 cup Unsalted Butter, softened
1/2 cup Granulated Sugar
1/4 cup Light Brown Sugar, packed
1 Large Egg
1 teaspoon Vanilla Extract
1 1/4 cups All-Purpose Flour
1/2 teaspoon Baking Soda
1/4 teaspoon Salt
5-6 ounces Chow Mein Noodles OR shredded coconut
1 cup Chocolate Chips
1 bag Mini Candy Eggs (about 8-10 ounces)
A few drops Food coloring (green or yellow) for nests (optional)

Instructions

  1. In a large mixing bowl, cream together the softened butter, granulated sugar, and light brown sugar until light and fluffy. Then, beat in the egg and vanilla extract until well combined
  2. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add to the wet ingredients, mixing on low speed until just combined
  3. Cover with plastic wrap and refrigerate the dough for at least 30 minutes
  4. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper
  5. Roll dough into 1-inch balls and place them 2 inches apart on the baking sheets. Press an indentation into each ball to form a

  7. Bake for 8-10 minutes until the edges are lightly golden and centers look soft. Let cookies cool completely before moving
  8. While cookies cool, melt chocolate chips in the microwave or using a double boiler
  9. Once cookies are cool, spoon melted chocolate into the indentation. Press chow mein noodles or shredded coconut into the chocolate to form a nest
  10. Place mini candy eggs into each nest before chocolate sets
  11. Let the cookies sit until the chocolate sets, then enjoy!
