Delightful Easter Bunny Cinnamon Rolls that bring joy and charm to any Easter celebration.

Ingredients

5 cups All-purpose flour
1/2 cup Granulated sugar (for dough)
1/2 cup Granulated sugar (for filling)
2 1/4 teaspoons Active dry yeast
1 1/2 cups Warm milk (105-115°F)
1/2 cup Unsalted butter (melted, for dough)
1/2 cup Unsalted butter (softened, for filling)
1/2 cup Unsalted butter (softened, for frosting)
1 Large egg
1 teaspoon Salt
2 tablespoons Ground cinnamo
8 ounces Cream cheese (softened)
3-4 cups Powdered sugar
1 teaspoon Vanilla extract
Mini marshmallows or sliced almonds (as needed)

Instructions

  1. Activate the yeast by combining warm milk, 1/2 cup sugar, and yeast; let sit for 5-10 minutes until foamy
  2. Prepare the dough by mixing in melted butter, egg, and salt, then add flour gradually to form a shaggy dough and knead until smooth
  3. Let the dough rise in a greased bowl for 1-1.5 hours until doubled in size
  4. Prepare the filling by mixing softened butter, remaining sugar, and cinnamon until spreadable
  5. Shape the rolls by rolling the dough into a rectangle, spreading filling, then rolling tightly and cutting into pieces
  6. Create bunny shapes by cutting a V for ears and spreading them slightly
  7. Let the shaped rolls rise for another 30-45 minutes until puffy
  8. Bake at 375°F for 18-22 minutes until golden brow
  9. Prepare frosting by beating cream cheese and butter, then gradually add powdered sugar and vanilla
  10. Frost the rolls while warm and add decorations

Notes

Dough can be prepared a day ahead and refrigerated after the first rise.
