1 (9-inch) Graham Cracker Crust
2 (8-ounce) blocks Cream Cheese
1 ½ cups Powdered Sugar
1 teaspoon Vanilla Extract
1 ½ cups Heavy Cream
¼ cup Milk
Assorted pastel colors Gel Food Coloring

Instructions

  1. Prepare the Crust: Start with your 9-inch graham cracker crust. If making from scratch, combine 1 ½ cups graham cracker crumbs with ¼ cup melted butter and 2 tablespoons sugar. Press firmly into a pie dish and chill for at least 15 minutes
  2. Cream the Cheese: Beat softened cream cheese with an electric mixer until smooth and creamy, about 2-3 minutes
  3. Add Sweetness and Flavor: Gradually add sifted powdered sugar to cream cheese, beating until well combined. Stir in vanilla extract
  4. Whip the Cream: In a separate, well-chilled bowl, whip the heavy cream until stiff peaks form
  5. Fold It In: Gently fold the whipped cream into the cream cheese mixture in two additions
  6. Divide and Conquer (with Color!): Divide the creamy filling into 3 or 4 bowls and add gel food coloring to each. Fold until colors are incorporated
  7. Swirl into the Crust: Spoon alternating dollops of each colored filling into the prepared crust
  8. Create the Swirl: Use a knife or skewer to gently drag through the colored dollops to create a swirl effect
  9. Chill Out: Cover the pie with plastic wrap and refrigerate for at least 4-6 hours, preferably overnight
  10. Serve and Enjoy: Once firm, remove from the refrigerator, slice, and serve
