1.5 lbs Boneless, skinless chicken breasts
1/2 cup Almond flour
1 large Egg
1 tbsp Heavy cream
1/2 cup Frank’s RedHot Original Sauce
1/4 cup Unsalted butter (melted)
1 tsp Garlic powder
1 tsp Onion powder
1/2 tsp Smoked paprika
1/2 tsp Salt
1/4 tsp Black pepper
1-2 cups Avocado oil (or other high smoke point oil for frying)

Instructions

  1. Prepare the Chicken: Pat the chicken breasts dry, then cut them into 1-inch bite-sized pieces and set aside
  2. Set Up Dredging Stations: Whisk together the egg and heavy cream in one dish, and mix the almond flour and spices in another
  3. Coat the Chicken: Dip each piece of chicken first into the egg mixture, then dredge in the almond flour mixture, ensuring an even coating
  4. Heat the Oil: Heat avocado oil in a skillet to 350-375°F (175-190°C)
  5. Fry the Nuggets: Fry the nuggets in batches for 3-5 minutes per side until golden brown and cooked through
  6. Drain Excess Oil: Place the nuggets on a wire rack over a paper towel-lined baking sheet to drain excess oil
  7. Make the Buffalo Sauce: Whisk together the Frank's RedHot sauce and melted butter in a bowl
  8. Toss with Sauce: Place the drained nuggets in a bowl, pour the buffalo sauce over, and toss to coat
