1 ¾ cups All-Purpose Flour
1 teaspoon Baking Soda
½ teaspoon Salt
½ cup Unsalted Butter, softened
¾ cup Granulated Sugar
¾ cup Light Brown Sugar, packed
1 cup Creamy Peanut Butter
1 Large Egg
1 teaspoon Vanilla Extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set this aside
  3. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy
  4. Add the creamy peanut butter, egg, and vanilla extract, mixing until just combined
  5. Gradually mix the dry ingredients into the wet ingredients until just combined
  6. Scoop out dough balls and place them on the prepared baking sheets
  7. Press a fork onto each dough ball to create a crisscross patter
  8. Bake for 9-12 minutes, or until the edges are lightly golden and the centers look slightly soft
  9. Let cool on the sheets for 5 minutes before transferring to a wire rack to cool completely

Notes

To keep cookies soft, store them in an airtight container with a slice of bread.
