2 pints Fresh Raspberries
1/2 cup Granulated Sugar
1/4 cup Water
1/2 cup Espresso (cooled)
16 oz Mascarpone Cheese
1 1/2 cups Heavy Cream
1 teaspoon Vanilla Extract
1 package Ladyfingers (approx. 7 oz)
Fresh Mint Leaves (optional)

Instructions

  1. Prepare the Raspberry Syrup: Combine 1 pint of fresh raspberries, 1/4 cup granulated sugar, and 1/4 cup water in a small saucepan. Simmer until the raspberries break down. Strain and cool
  2. Make the Mascarpone Cream: Beat chilled heavy cream with remaining sugar and vanilla until stiff peaks form. Whisk mascarpone until smooth, then fold in the whipped cream
  3. Combine Syrups (optional): Mix cooled raspberry syrup with cooled espresso if using
  4. Assemble the Tiramisu: Quickly dip ladyfingers into the syrup mixture, layer them in a dish, and spread half of the mascarpone cream over them. Scatter half of the raspberries over the cream
  5. Repeat Layers: Add another layer of dipped ladyfingers, then the remaining mascarpone cream, and top with the rest of the raspberries
  6. Chill and Garnish: Cover and refrigerate for at least 4-6 hours. Garnish with mint leaves and extra raspberries before serving
