These Energy Bites are a quick, nutritious, and delicious snack made from simple pantry staples. Perfect for busy lives, they provide sustained energy and are easily customizable to fit your dietary preferences.

Ingredients

2 cups Old-fashioned rolled oats
1 cup Creamy peanut butter
½ cup Ground flaxseed
½ cup Honey or maple syrup
½ cup Mini chocolate chips (optional)
¼ cup Chia seeds
1 teaspoon Vanilla extract
¼ teaspoon Pinch of salt
¼ cup Shredded coconut (unsweetened, optional)

Instructions

  1. In a large mixing bowl, combine the old-fashioned rolled oats, ground flaxseed, chia seeds, and shredded coconut (if using). Add the pinch of salt. Stir these dry ingredients together thoroughly
  2. Pour in the creamy peanut butter, honey (or maple syrup), and vanilla extract into the bowl with the dry ingredients
  3. Using a sturdy spoon or your hands, mix everything together until well combined
  4. If you're adding mini chocolate chips, fold them in now
  5. Cover the bowl with plastic wrap and refrigerate the mixture for at least 30 minutes
  6. Remove the chilled mixture from the refrigerator. Roll small portions (about 1-2 tablespoons) into golf-ball-sized spheres
  7. Place the finished Energy Bites in an airtight container and refrigerate them
