This French Pineapple Cake is a moist and tender dessert topped with caramelized pineapple. It's perfect for special occasions and easy to make, even for novice bakers.

2 lbs Fresh Pineapple, peeled, cored, and sliced into ½-inch rings
2 tbsp Unsalted Butter (for pan), melted
½ cup Brown Sugar (for topping), packed
1 ½ cups All-Purpose Flour
1 ½ tsp Baking Powder
½ tsp Salt
¾ cup Unsalted Butter (for batter), softened
1 cup Granulated Sugar
2 Large Eggs, room temperature
1 tsp Vanilla Extract
½ cup Whole Milk, room temperature

Instructions

  1. Preheat your oven to 350°F (175°C). Melt 2 tablespoons of unsalted butter and pour it into a 9-inch round cake pan. Swirl to coat the bottom evenly. Sprinkle ½ cup of packed brown sugar evenly over the melted butter
  2. Arrange your pineapple slices in a single layer over the brown sugar
  3. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set this aside
  4. In a large mixing bowl, using an electric mixer, cream together ¾ cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy
  5. Beat in the large eggs one at a time, mixing well after each addition. Stir in the vanilla extract
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the milk
  7. Carefully spoon the cake batter over the pineapple slices in the prepared pa
  8. Bake for 40-50 minutes, or until a wooden skewer inserted into the center of the cake comes out clea
  9. Let the cake cool in the pan on a wire rack for 10-15 minutes. Then, place a serving plate upside down over the cake pan and carefully invert the cake onto the plate
  10. Allow the French Pineapple Cake to cool completely before slicing and serving

Notes

If using canned pineapple, ensure it is well-drained and patted dry.

For gluten-free version, substitute with a gluten-free all-purpose flour blend.
