Ingredients

Scale

5-6 pounds Bone-in Leg of Lamb
1/2 cup Unsalted Butter
8-10 Fresh Garlic Cloves, minced
2 tablespoons Fresh Rosemary, chopped
1 tablespoon Fresh Thyme, chopped
2 tablespoons Olive Oil
1 tablespoon Salt
1 teaspoon Black Pepper
1 Lemon, halved (optional)
1 cup Chicken or Beef Broth

Instructions

  1. Remove the leg of lamb from the refrigerator 1-2 hours before roasting. Pat dry and score the fatty side
  2. Mix softened butter, minced garlic, rosemary, thyme, salt, and black pepper in a bowl
  3. Rub lamb with olive oil and spread garlic butter mixture over it
  4. Preheat oven to 400°F. Place roasting rack in the pan and add broth
  5. Roast lamb fat-side up for 15-20 minutes, then reduce temperature to 325°F, roasting for 15-20 minutes per pound for medium-rare
  6. Baste every 30-45 minutes and check temperature for doneness
  7. Rest the lamb for at least 15-20 minutes before carving
  8. Carve and serve with pan juices

Notes

Bring the lamb to room temperature before cooking for more even results.

Score the fat cap to enhance rendering and flavor penetration.
