Garlic Butter Shrimp Pasta is a quick and delicious weeknight dinner that combines succulent shrimp with al dente pasta in a rich garlic butter sauce, finished with fresh herbs and a hint of lemon.

1 pound Pasta
1.5 pounds Shrimp
6 tablespoons Unsalted Butter
2 tablespoons Olive Oil
6-8 cloves Garlic
1/2 cup Dry White Wine
1/2 cup Chicken or Vegetable Broth
1 medium Lemo
1/4 cup Fresh Parsley
1/2 teaspoon Red Pepper Flakes
Salt and Black Pepper to taste
Parmesan Cheese for serving

Instructions

  1. Cook the Pasta: Bring a large pot of heavily salted water to a rolling boil. Add your chosen pasta and cook according to package directions until al dente. Reserve about 1 cup of pasta water before draining
  2. Prepare the Shrimp: While the pasta cooks, pat the shrimp dry with paper towels. Season them generously with salt, black pepper, and half of the red pepper flakes
  3. Sauté the Shrimp: In a large skillet, melt 2 tablespoons of butter with 1 tablespoon of olive oil over medium-high heat. Once shimmering, add the seasoned shrimp in a single layer. Cook for 1-2 minutes per side, until pink and opaque. Remove the shrimp from the skillet and set aside
  4. Build the Garlic Butter Sauce: Reduce the heat to medium, add the remaining 4 tablespoons of butter and 1 tablespoon of olive oil. Add the minced garlic and the rest of the red pepper flakes. Sauté for 1 minute until fragrant
  5. Deglaze and Simmer: Pour in the white wine (if using) and let it simmer for 1-2 minutes. Then, add the chicken or vegetable broth and bring to a gentle simmer
  6. Combine Everything: Add the cooked and drained pasta to the skillet, toss well to coat. Squeeze in lemon juice and add lemon zest. Add the cooked shrimp back into the skillet
  7. Adjust Consistency: If the sauce is too thick, add reserved pasta water until desired thickness is reached
  8. Finish and Serve: Stir in fresh parsley and adjust seasoning. Serve immediately with Parmesa

Notes

Don't overcook the shrimp; they should be pink and opaque after 1-2 minutes per side.

Salt the pasta water generously for better flavor.
