¼ cup Olive Oil
4-6 cloves Garlic
2 sprigs Fresh Rosemary
2 sprigs Fresh Thyme
1 teaspoon Salt
½ teaspoon Black Pepper
2 tablespoons Fresh Parsley (optional)

Instructions

  1. Preheat your oven to 400°F (200°C)
  2. Wash and cut the potatoes into uniform 1-inch pieces. Consider soaking them in cold water for 15-30 minutes, then dry thoroughly
  3. In a large mixing bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and pepper
  4. Toss the potatoes in the herb-garlic oil mixture until well coated
  5. Arrange the potatoes in a single layer on a baking sheet
  6. Roast in the oven for 30-40 minutes, flipping halfway, until the potatoes are golden brown and crispy
  7. Serve warm, optionally garnished with fresh parsley
