A quick and easy Gluten Free Cinnamon Roll in a Mug recipe that is also vegan, allowing you to satisfy your sweet tooth in under five minutes with minimal cleanup.

4 tablespoons Gluten-Free All-Purpose Flour Blend (with xanthan gum)
1 tablespoon Granulated Sugar
1/4 teaspoon Baking Powder
Pinch Salt
3 tablespoons Unsweetened Plant Milk (almond, soy, or oat)
1 teaspoon Vegan Butter (melted)
1 tablespoon Brown Sugar (packed)
1/2 teaspoon Ground Cinnamo
1 tablespoon Vegan Cream Cheese (softened)
1-2 tablespoons Powdered Sugar (to taste)
1/2-1 teaspoon Unsweetened Plant Milk (as needed)

Instructions

  1. In a microwave-safe mug, combine the gluten-free flour, granulated sugar, baking powder, and salt. Whisk these dry ingredients together thoroughly
  2. Pour in the unsweetened plant milk and stir until just combined, careful not to overmix
  3. In a separate bowl, melt the vegan butter and stir in the brown sugar and ground cinnamon until it forms a thick paste
  4. Spoon about half of the prepared dough into the bottom of the mug, then spoon half of the cinnamon mixture over it, swirling gently. Repeat with remaining dough and cinnamon mixture
  5. Microwave on high for 60-90 seconds, checking for firmness but slightly moist in the center
  6. Let the mug sit for 1-2 minutes, then prepare the frosting by mixing the vegan cream cheese, powdered sugar, and plant milk until smooth
  7. Spread or drizzle the frosting over the warm cinnamon roll and enjoy immediately

Notes

Best served warm and fresh. Unfrosted rolls can be stored in the fridge for a day but are best made fresh.
