½ cup Unsalted Butter
½ cup Buttermilk
1 tsp White Vinegar
1 tsp Vanilla Extract
1-2 tsp Green Gel Food Coloring
8 oz Cream Cheese
½ cup Unsalted Butter
3-4 cups Powdered Sugar
1 tsp Vanilla Extract
Pinch of Salt

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a muffin tin with paper liners
  2. In a large bowl, whisk together all-purpose flour, granulated sugar, cocoa powder, baking soda, and salt
  3. In a separate medium bowl, whisk together melted butter, buttermilk, eggs, vanilla extract, and white vinegar
  4. Add green gel food coloring to the wet mixture until the desired color is achieved
  5. Combine wet ingredients with dry ingredients, mixing until just combined
  6. Divide batter among muffin cups, filling about two-thirds full
  7. Bake for 18-22 minutes, or until a skewer comes out clea
  8. Cool cupcakes in the tin for 5 minutes before transferring to a wire rack to cool completely
  9. For frosting, beat together cream cheese and butter until smooth, then gradually add powdered sugar, beating until fluffy
  10. Frost cooled cupcakes and enjoy!
