Guilt-Free Crispy Keto Cinnamon Cream Cheese Roll Ups are a delightful low-carb treat that mimic classic cinnamon rolls without the sugar and carbs. With a crispy exterior and a creamy filling, these roll ups are perfect for breakfast, snacks, or dessert.

1 ½ cups Almond Flour
2 cups Shredded Mozzarella Cheese
8 oz Cream Cheese
½ cup Erythritol or Monk Fruit Blend
1 tbsp Ground Cinnamo
1 tsp Vanilla Extract
1 large Egg
2 tbsp Unsalted Butter

Instructions

  1. Preheat your oven to 375°F (190°C) and line a large baking sheet with parchment paper
  2. In a large microwave-safe bowl, combine the shredded mozzarella cheese and 2 tablespoons of softened cream cheese. Microwave until fully melted and smooth
  3. Quickly add the almond flour, 2 tablespoons of erythritol/monk fruit, and the egg to the melted cheese mixture, mixing thoroughly until a cohesive dough forms
  4. Place the dough between two sheets of parchment paper and roll it out into a large rectangle about 10×14 inches and ¼ inch thick
  5. In a separate bowl, beat the remaining 8 oz softened cream cheese with ½ cup erythritol/monk fruit, 1 tablespoon ground cinnamon, and 1 teaspoon vanilla extract until smooth
  6. Spread the cream cheese filling over the dough, leaving a ½ inch border on one side
  7. Starting from the longer side without the border, roll the dough tightly into a log and pinch the seam to seal
  8. Slice the log into 10-12 even pieces and place them seam-side down on the prepared baking sheet
  9. Melt 2 tablespoons of unsalted butter, mixing in ¼ cup erythritol/monk fruit and 1 teaspoon ground cinnamo
  10. Brush the cinnamon-butter mixture over the tops of each roll up and bake for 18-22 minutes until golden brown and crispy
  11. Let cool for 5-10 minutes before serving warm

Notes

Make sure to soften your cream cheese for smooth mixing.

Using low-moisture mozzarella is key for the dough.
