2 ½ cups All-purpose flour
1 ¾ cups Granulated sugar
1 tablespoon Baking powder
½ teaspoon Salt
¾ cup Unsalted butter, softened
4 Large eggs, room temperature
1 cup Whole milk, room temperature
1 ½ cups Guava nectar (100% juice)
¼ cup Granulated sugar (or to taste)
2 tablespoons Cornstarch
1 teaspoon Fresh lime juice
16 ounces Cream cheese, softened
½ cup Unsalted butter, softened
4-5 cups Powdered sugar, sifted
1 teaspoon Vanilla extract
¼ cup Guava paste, melted (optional, for swirl)
¼ cup Toasted coconut flakes (for garnish, optional)
Fresh berries or edible flowers (for garnish, as desired)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans
  2. In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt. Set aside
  3. In the bowl of a stand mixer, cream the softened butter until light and fluffy. Add eggs one at a time, beating well after each additio
  4. Gradually add the dry ingredients to the butter mixture, alternating with the whole milk. Mix until just combined
  5. Divide the batter evenly between the cake pans and bake for 28-32 minutes, or until a skewer inserted comes out clea
  6. Let the cakes cool in the pans for 10-15 minutes, then invert onto a wire rack and cool completely
  7. In a medium saucepan, whisk together guava nectar, granulated sugar, and cornstarch. Cook over medium heat until thickened, about 2-3 minutes. Stir in lime juice and chill
  8. In a stand mixer, beat softened cream cheese and butter until smooth. Gradually add sifted powdered sugar, then stir in vanilla extract
  9. Level the cakes and place one layer on a serving platter. Spread half of the chilled guava filling on top, then place the second layer
  10. Frost the top and sides of the cake with the cream cheese frosting. Optionally add a guava swirl
  11. Garnish with coconut flakes, berries, or edible flowers and chill before serving
