This Healthy Street Corn Pasta Salad captures the vibrant essence of authentic Mexican street corn in a lighter, pasta-salad format. It's incredibly flavorful, nutritious, and perfect for busy weeknights or potlucks.

Ingredients

12 ounces Whole Wheat Elbow Macaroni or Penne
4 cups Fresh or Frozen Corn Kernels
1 large Red Bell Pepper
½ medium Red Onio
1-2 Jalapeño
½ cup Fresh Cilantro
4 ounces Feta Cheese
¾ cup Plain Greek Yogurt (2% or Full-Fat)
¼ cup Lime Juice
1 teaspoon Chili Powder
½ teaspoon Smoked Paprika
½ teaspoon Garlic Powder
½ teaspoon Salt
¼ teaspoon Black Pepper

Instructions

  1. Cook the pasta according to package directions until al dente. Drain and rinse with cold water. Set aside
  2. Blanch fresh corn or thaw frozen corn. Sauté for extra flavor if desired. Add to the cooled pasta
  3. Finely dice red bell pepper, red onion, and mince jalapeño. Chop cilantro and add to the pasta mixture
  4. Crumble feta cheese into the bowl
  5. In a separate bowl, whisk together Greek yogurt, lime juice, chili powder, smoked paprika, garlic powder, salt, and black pepper
  6. Pour dressing over pasta and mix well to coat evenly
  7. Chill for at least 30 minutes before serving. Garnish with cilantro and lime if desired

Notes

Adjust spice level by adding more or less jalapeño.

Use gluten-free pasta to make the recipe gluten-free.
