This Heart-Shaped Swiss Roll is a delightful dessert that combines a light, airy sponge cake with a rich whipped cream filling, all beautifully shaped into a heart to convey your love and affection.

4 large Eggs, separated (yolks and whites)
1/2 cup Granulated sugar, divided
1/2 cup All-purpose flour, sifted
1/4 cup Unsweetened cocoa powder, sifted
1 teaspoon Vanilla extract
1/4 teaspoon Salt
1 1/2 cups Heavy cream, very cold
1/4 cup Powdered sugar, sifted
2 tablespoons Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a 10×15-inch jelly roll pan with parchment paper
  2. Separate the egg whites and yolks into different bowls and beat the yolks with 1/4 cup of sugar and vanilla until thick and pale
  3. Whip egg whites with a pinch of salt, gradually adding the other 1/4 cup of sugar until stiff peaks form
  4. Fold a third of the egg whites into the yolk mixture, then sift in the flour and cocoa, folding gently to combine, and then fold in the remaining whites
  5. Spread the batter in the prepared pan and bake for 10-12 minutes until springy
  6. Once baked, invert the cake onto a sugar-dusted towel or parchment and roll it up while warm
  7. Cool the rolled cake completely while wrapped in the towel
  8. Whip heavy cream with powdered sugar and vanilla until stiff peaks form
  9. Unroll the cooled cake and spread the filling, then re-roll it into a heart shape and chill
  10. Dust with powdered sugar before serving and slice to reveal the heart shape
