2 ½ cups All-Purpose Flour
1 ¾ cups Granulated Sugar
1 tablespoon Baking Powder
½ teaspoon Salt
1 cup Unsalted Butter, softened
4 Large Eggs, room temperature
1 cup Whole Milk, room temperature
1 ½ teaspoons Vanilla Extract
½ teaspoon Almond Extract
¾ cup Maraschino Cherries, drained and chopped
1 cup White Chocolate Chips
Cream Cheese Frosting or Vanilla Buttercream (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt
  3. In a separate bowl, cream the softened butter and sugar together until light and fluffy
  4. Add eggs one at a time, mixing well after each addition. Stir in the vanilla and almond extracts
  5. Gradually add the dry mixture to the wet ingredients, alternating with the milk, starting and ending with the dry ingredients
  6. Fold in the chopped cherries and white chocolate chips gently
  7. Divide the batter between the prepared pans and smooth the tops
  8. Bake for 28-32 minutes, or until a skewer inserted into the center comes out clea
  9. Cool in the pans for 10-15 minutes before transferring to a wire rack to cool completely
