2 cups Granulated Sugar
4 Large Eggs
1 teaspoon Vanilla Extract
1 cup All-Purpose Flour
¾ cup Unsweetened Cocoa Powder
½ teaspoon Salt
1 tablespoon Espresso Powder
½ cup Brewed Espresso, cooled
2 tablespoons Coffee Liqueur
8 ounces Mascarpone Cheese, softened
1 cup Heavy Cream, cold
½ cup Powdered Sugar
2 tablespoons Unsweetened Cocoa Powder (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking pan with parchment paper
  2. In a large mixing bowl, combine melted butter and granulated sugar. Whisk until smooth
  3. Beat in the eggs one at a time, then stir in the vanilla extract until glossy
  4. In another bowl, whisk together flour, cocoa powder, salt, and espresso powder. Combine with wet ingredients until just mixed
  5. Pour the batter into the pan and bake for 25-30 minutes. Cool completely on a wire rack
  6. Prepare the coffee soak by mixing cooled espresso with optional liqueur
  7. Brush the coffee mixture over the cooled brownies and let absorb for a few minutes
  8. Whip heavy cream until stiff peaks form, and in a separate bowl, mix mascarpone, powdered sugar, and vanilla
  9. Fold whipped cream into mascarpone mixture and spread evenly over brownies
  10. Chill for at least 4 hours before dusting with cocoa powder and serving
