A vibrant dish featuring marinated chicken breast, creamy avocado, and fluffy rice, stacked elegantly for a delightful presentation.

Ingredients

1.5 lbs Boneless, skinless chicken breasts or thighs
1/4 cup Honey
1/4 cup Fresh lime juice (from 2-3 limes)
2 cloves Garlic, minced
1 tbsp Olive oil
1/2 tsp Cumi
1 tsp Chili powder (optional)
Salt and freshly ground black pepper to taste
2 cups Cooked white or brown rice, cooled
2 Ripe avocados, pitted and scooped out
1/4 cup Fresh cilantro, chopped
1/4 cup Red onion, finely diced
1 small Jalapeño, seeded and minced (optional)
Fresh cilantro, chopped, for garnish
Lime wedges, for serving

Instructions

  1. Marinate the chicken with honey, lime juice, garlic, olive oil, chili powder, cumin, salt, and pepper for at least 30 minutes
  2. Prepare the rice according to the package instructions and allow it to cool completely
  3. Mash the avocados, then mix with cilantro, lime juice, red onion, jalapeño, salt, and pepper. Fold in the cooled rice
  4. Cook the marinated chicken in a skillet over medium-high heat until golden and cooked through, then let it rest before slicing
  5. Assemble the stack using a food ring or similar by layering rice and chicke
  6. Garnish with fresh cilantro and serve with lime wedges

Notes

For a vegetarian version, substitute chicken with halloumi cheese, tofu, or black beans.

Adjust the spice level to taste by modifying the amount of chili powder or jalapeño.
