Ingredients

Scale

4 Large Low-Carb Tortillas (approx. 8-10 inches)
4 Small Low-Carb Tortillas (approx. 4-5 inches) OR Keto Cheese Crisps
1 lb Ground Beef (80/20 or 90/10)
1-2 tbsp Taco Seasoning (sugar-free, keto-friendly)
1/4 cup Water
1 cup Shredded Cheddar Cheese
1 cup Shredded Monterey Jack Cheese
1/2 cup Sour Cream (full-fat)
1 cup Shredded Lettuce (iceberg or romaine)
1/2 cup Diced Tomatoes
1/2 cup Keto Nacho Cheese Sauce (store-bought or homemade)
1-2 tbsp Avocado Oil or Ghee (for grilling)

Instructions

  1. Prepare the Meat: Heat a large skillet over medium-high heat. Add ground beef and cook until browned. Drain excess grease, then stir in taco seasoning and 1/4 cup water. Simmer for 5-7 minutes
  2. Prep Your Toppings: Shred lettuce, dice tomatoes, and prepare shredded cheeses, sour cream, and keto nacho cheese sauce
  3. Warm the Tortillas: Warm the large low-carb tortillas in the microwave or dry skillet for 10-15 seconds
  4. Assemble the Crunchwrap: Place one large low-carb tortilla on a clean surface. Layer the seasoned beef, keto nacho cheese sauce, shredded cheeses, sour cream, small tortilla/crisps, and veggies
  5. Fold the Crunchwrap: Fold the edges of the large tortilla towards the center, overlapping to cover the fillings
  6. Grill the Crunchwrap: Heat a non-stick skillet over medium heat, add oil, and place the crunchwrap seam-side down. Cook for 3-5 minutes until golden brow
  7. Flip and Finish: Carefully flip the crunchwrap and cook for another 3-5 minutes until crispy and cheese is melted
  8. Serve Immediately: Slice in half and enjoy

Notes

For a spicier version, add jalapeños or hot sauce.
