3 cups Cooked Chicken, shredded or diced
2 cans (10.5 oz) Cream of Chicken Soup
1 can (10.5 oz) Cream of Mushroom Soup
1 can (10 oz) Rotel Tomatoes, undrained
1 medium Onion, chopped
1 medium Bell Pepper, chopped
2-3 cloves Garlic, minced
1 tbsp Chili Powder
1 tsp Cumi
1 tsp Salt
½ tsp Black Pepper
12-15 (6-inch) Corn Tortillas
2 cups Cheddar Cheese, shredded
1 cup Monterey Jack Cheese, shredded
2 tbsp Vegetable Oil
¼ – ½ cup Chicken Broth or Milk (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish
  2. Shred or dice cooked chicken, chop onion and bell pepper, and mince garlic. Lightly fry corn tortillas if desired
  3. Heat vegetable oil in a skillet, sauté onion and bell pepper for 5-7 minutes, add garlic, chili powder, and cumin, then cook for another minute
  4. Add cream soups and Rotel tomatoes to the skillet, mix well, and season with salt and pepper
  5. Fold shredded chicken into the sauce mixture until coated
  6. Spread ½ cup of chicken mixture at the bottom of the baking dish and layer tortillas on top, then half of the chicken mixture and 1 cup of cheese. Repeat layers and top with remaining tortillas and cheese
  7. Cover with foil and bake for 25 minutes, then uncover and bake for an additional 15-20 minutes until bubbly and golde
  8. Let rest for 10-15 minutes before serving

Notes

For a vegetarian option, substitute chicken with extra beans and vegetables.

Customize spice level according to preference by adjusting chili powder and using mild or hot Rotel.
