Delightful homemade Lemon Crumb Bars with a buttery, tender crust and a zesty lemon filling, crowned with a sweet crumbly topping.

Ingredients

2 ½ cups All-purpose flour
½ cup Granulated sugar
1 cup Cold unsalted butter
1 teaspoon Baking powder
½ teaspoon Salt
4 Large eggs
1 ½ cups Granulated sugar
½ cup Fresh lemon juice
2 tablespoons Lemon zest
¼ cup All-purpose flour
2 tablespoons Powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking pan with parchment paper
  2. Whisk together 2 cups flour, ½ cup sugar, baking powder, and salt. Cut in cold butter until mixture resembles coarse crumbs
  3. Press about 2/3 of the mixture into the bottom of the pan to form the crust. Reserve the remaining crumbs for the topping
  4. Par-bake the crust for 15-18 minutes until lightly golde
  5. Whisk together eggs, 1 ½ cups sugar, lemon juice, and zest. Gradually whisk in ¼ cup flour
  6. Pour lemon filling over the warm crust
  7. Sprinkle reserved crumb mixture over the filling
  8. Bake for an additional 25-30 minutes until topping is golden and filling is set
  9. Cool completely in the pan before cutting into squares
  10. Dust with powdered sugar before serving
