Lemon Dessert Cups are delightful individual servings filled with a zesty lemon curd, set in a buttery graham cracker crust, topped with whipped cream. Perfect for summer gatherings and any occasion.

1 ½ cups Graham Cracker Crumbs
½ cup Unsalted Butter, melted
1/4 cup Granulated Sugar
1 cup Granulated Sugar
4 Large Eggs
¾ cup Lemon Juice, fresh
2 tablespoons Lemon Zest
2 tablespoons Cornstarch
¼ teaspoon Salt
1 cup Heavy Cream
2 tablespoons Powdered Sugar

Instructions

  1. Step 1: Prepare the crust by combining graham cracker crumbs, ¼ cup granulated sugar, and melted butter. Press into muffin cups and bake at 350°F for 8-10 minutes
  2. Step 2: Make the lemon curd by whisking together 1 cup granulated sugar, cornstarch, salt, eggs, lemon juice, and zest in a saucepan. Cook over medium-low heat until thickened, then strain and chill
  3. Step 3: Assemble by spooning the lemon curd over cooled crusts and chilling again for an hour
  4. Step 4: Prepare the whipped cream by whipping heavy cream with powdered sugar until soft peaks form
  5. Step 5: Garnish and serve with whipped cream and lemon zest
