Lemon Tiramisu is a refreshing and creamy Italian dessert that infuses the classic tiramisu with bright lemon flavor. It's a no-bake masterpiece featuring layers of luscious mascarpone cream and delicate ladyfingers soaked in zesty lemon syrup, making it a perfect summer treat.

Ingredients

24 oz Mascarpone Cheese, chilled
2 cups Heavy Cream, cold
1 cup Granulated Sugar, divided
½ cup Fresh Lemon Juice
2 tablespoons Lemon Zest
1 teaspoon Vanilla Extract
2 packages Ladyfingers (about 48 ladyfingers)
½ cup Water
Powdered Sugar, for dusting (optional)
Fresh Berries or Mint, for garnish (optional)

Instructions

  1. Prepare the Lemon Syrup: In a small saucepan, combine ½ cup water and ½ cup of the granulated sugar. Heat over medium heat, stirring until the sugar dissolves. Remove from heat and stir in the fresh lemon juice. Let cool
  2. Make the Mascarpone Cream: In a large bowl, beat the chilled heavy cream until soft peaks form. Gradually add the remaining ½ cup of granulated sugar and continue beating until stiff peaks develop. In another bowl, whisk the chilled mascarpone cheese until smooth. Fold in lemon zest and vanilla extract
  3. Combine the Creams: Gently fold the whipped cream into the mascarpone mixture in two additions
  4. Assemble the First Layer: Quickly dip each ladyfinger into the cooled lemon syrup, then arrange a layer in a 9×13 inch baking dish
  5. Add Cream and Repeat: Spread half of the mascarpone cream over the ladyfingers. Repeat with another layer of soaked ladyfingers and the remaining cream
  6. Chill: Cover loosely with plastic wrap and refrigerate for at least 6 hours or overnight
  7. Garnish and Serve: Dust with powdered sugar and garnish with fresh berries, lemon slices, or mint before serving

Notes

Use only cold ingredients to ensure better whipping of cream.

Do not over-soak the ladyfingers.

Make it a day in advance for best results.
