Marry Me Chicken Meatballs are a creamy, dreamy dish featuring tender chicken meatballs simmered in a luxurious garlic and sun-dried tomato cream sauce, perfect for impressing guests or comforting loved ones.

Ingredients

1.5 lbs Ground Chicke
1/2 cup Plain Breadcrumbs
1 large Egg, lightly beate
1/4 cup Grated Parmesan Cheese
2 tbsp Fresh Parsley, finely chopped
1 tsp Onion Powder
1 tsp Garlic Powder
1/2 tsp Dried Oregano
1/2 tsp Salt
1/4 tsp Black Pepper
2 tbsp Olive Oil (for browning)
2 tbsp Unsalted Butter
4 cloves Garlic, minced
1/2 cup Sun-Dried Tomatoes, packed in oil, drained and chopped
1 cup Chicken Broth
1.5 cups Heavy Cream
1/2 cup Grated Parmesan Cheese
1/4 tsp Red Pepper Flakes (optional)
4 cups Fresh Spinach, roughly chopped
1/4 cup Fresh Basil or Parsley, chopped (for garnish)

Instructions

  1. In a large mixing bowl, combine the ground chicken, breadcrumbs, beaten egg, 1/4 cup Parmesan, parsley, onion powder, garlic powder, oregano, salt, and pepper. Mix until combined
  2. Roll the mixture into 1-1.5 inch meatballs (20-24 total)
  3. Heat 2 tbsp of olive oil in a skillet over medium-high heat. Brown meatballs on all sides, about 5-7 minutes. Set aside
  4. Add butter to the same skillet. Once melted, add garlic and sun-dried tomatoes. Sauté for 1-2 minutes
  5. Pour in chicken broth and deglaze the pan. Bring to a simmer for 2-3 minutes
  6. Stir in the heavy cream, 1/2 cup Parmesan, oregano, and red pepper flakes. Simmer for 5-7 minutes to thicke
  7. Add spinach and stir until wilted, about 1-2 minutes. Return meatballs to the skillet
  8. Cover the skillet and let simmer for 10-15 minutes until meatballs reach 165°F
  9. Adjust seasoning with salt and pepper, garnish with herbs, and serve

Notes

Do not overmix meatball mixture to avoid tough meatballs.

Brown meatballs in batches to ensure a good sear.
