1.5 lbs Boneless, Skinless Chicken Breasts, cut into 1-inch pieces
2 tbsp Olive Oil
1 tsp Salt, divided
½ tsp Black Pepper, divided
½ tsp Garlic Powder
½ tsp Onion Powder
2 tbsp Unsalted Butter
4-5 cloves Garlic, minced
½ cup Sun-Dried Tomatoes, packed in oil, drained and chopped
2 tbsp All-Purpose Flour
1.5 cups Chicken Broth, low sodium preferred
1 cup Heavy Cream
½ cup Parmesan Cheese, freshly grated, plus more for serving
¼ tsp Red Pepper Flakes, optional
12 oz Cooked Pasta, penne, fettuccine, or linguine work best
¼ cup Fresh Basil, chopped
2 tbsp Fresh Parsley, chopped, optional garnish

Instructions

  1. Cook the Pasta: Cook chosen pasta according to package directions until al dente and reserve ½ cup of pasta water
  2. Prepare the Chicken: Pat chicken dry, season with salt, pepper, garlic powder, and onion powder
  3. Sear the Chicken: Heat olive oil in skillet, sear chicken until golden brown, then set aside
  4. Sauté Aromatics: Add butter to the skillet, sauté garlic and sun-dried tomatoes until fragrant
  5. Build the Sauce Base: Stir in flour to make a roux, then whisk in chicken broth and bring to a simmer
  6. Add Liquids: Pour in heavy cream and mix well
  7. Season and Simmer: Stir in Parmesan cheese and red pepper flakes, season to taste, and simmer until thickened
  8. Combine Everything: Return chicken and pasta to the skillet, toss to coat in sauce, and adjust with reserved pasta water if necessary
  9. Finish and Serve: Stir in fresh herbs, adjust seasonings, and serve immediately with extra Parmesa
