4 Boneless, skinless chicken breasts
2 tbsp Olive oil
1 tsp Salt
½ tsp Black pepper
4 cloves Garlic, minced
½ cup Sun-dried tomatoes (packed in oil), drained and chopped
1 cup Chicken broth
1 cup Heavy cream
½ cup Freshly grated Parmesan cheese
1 tsp Dried Italian seasoning
¼ tsp Red pepper flakes (optional)
¼ cup Fresh basil, chopped (for garnish)

Instructions

  1. Prepare the Chicken: Pat your chicken breasts dry with paper towels. Season generously on both sides with salt and black pepper
  2. Sear the Chicken: Heat olive oil in a large, oven-safe skillet over medium-high heat. Add the chicken breasts and sear for 5-7 minutes per side until golden brown and cooked through. Remove chicken from the skillet
  3. Sauté Aromatics: Reduce heat to medium. Add minced garlic and chopped sun-dried tomatoes to the skillet. Sauté for 1-2 minutes until fragrant
  4. Deglaze and Simmer: Pour in chicken broth, scraping the bottom of the skillet. Bring to a simmer and let it reduce slightly for about 2 minutes
  5. Create the Creamy Sauce: Stir in heavy cream, Italian seasoning, and red pepper flakes. Bring the sauce to a gentle simmer, then reduce heat to low
  6. Add Parmesan: Gradually stir in freshly grated Parmesan cheese until melted and the sauce thickens slightly
  7. Return Chicken: Carefully return the cooked chicken breasts to the skillet, spooning sauce over the chicke
  8. Garnish and Serve: Garnish with fresh chopped basil and serve immediately

Use freshly grated Parmesan for the best texture.
