1 lb Orzo Pasta
2 tablespoons Olive Oil
2 tablespoons Unsalted Butter
4-5 Garlic Cloves minced
4 cups Chicken Broth
1 cup Heavy Cream
1 cup Parmesan Cheese grated
½ cup Sun-Dried Tomatoes chopped
5 oz Fresh Spinach
½ teaspoon Salt or to taste
¼ teaspoon Black Pepper or to taste
Fresh Basil or Parsley for garnish

Instructions

  1. Heat olive oil and butter in a large skillet over medium heat; add minced garlic and sauté for 1 minute
  2. Add orzo to the skillet and stir for 2-3 minutes until lightly toasted
  3. Deglaze the skillet with ½ cup chicken broth, then add remaining broth and bring to a simmer
  4. Cover and cook for 10-12 minutes, stirring occasionally until orzo is al dente
  5. Remove from heat and stir in cream, Parmesan, and sun-dried tomatoes until creamy
  6. Add fresh spinach and stir until it wilts
  7. Taste and season with salt and black pepper, then garnish with basil or parsley before serving
