Marry Me Salmon is a rich, creamy dish bursting with flavor, featuring seared salmon fillets served with a luscious sun-dried tomato and parmesan cream sauce that makes hearts sing and taste buds dance.

Ingredients

4 6-oz Salmon Fillets (skin on or off, about 1-inch thick)
2 tbsp Olive Oil
2 tbsp Unsalted Butter
4-5 cloves Garlic (minced)
1/2 cup Sun-Dried Tomatoes (packed in oil, drained & chopped)
1/2 cup Chicken Broth (or vegetable broth)
1 cup Heavy Cream
1/2 cup Parmesan Cheese (freshly grated)
2 cups Fresh Spinach (packed)
1/4 tsp Red Pepper Flakes (optional, for a kick)
2 tbsp Fresh Parsley (chopped, for garnish)
Salt (to taste)
Black Pepper (to taste)

Instructions

  1. Pat the salmon fillets dry with paper towels and season with salt and black pepper
  2. Heat olive oil in a large skillet over medium-high heat and sear the salmon fillets skin-side down for 4-5 minutes, then flip and cook for another 2-3 minutes. Remove from the pa
  3. Add butter to the skillet, then sauté minced garlic and sun-dried tomatoes for 1-2 minutes
  4. Pour in chicken broth, scrape the pan to release flavor bits, and let simmer for 1-2 minutes
  5. Stir in heavy cream and red pepper flakes, then add Parmesan cheese, stirring until melted and thickened
  6. Add fresh spinach and stir until wilted
  7. Return the salmon to the skillet, nestling in the sauce, and garnish with parsley before serving

For variations, you can use other white fish or chicken, and add different vegetables or spices according to your preference.
